Muffin Pan Pizzas
Ingredients:
Pizza dough (make whichever recipe you prefer)
Pizza sauce (I usually do tomato sauce+Italian seasoning+white sugar)
Mozza cheese, shredded
Toppings (Pepperoni, pineapple, mushrooms, whatever you want)
Instructions:
Spray the muffin pan with cooking spray. Take small balls of the pizza dough and flatten them into circular shapes, just big enough to line a muffin cup. Make sure the dough is as thin as you can get it without having holes in it, as it will rise a lot (it will rise less if you are using frozen dough instead of fresh made just before). Do this to fill the whole muffin pan (or however many of these you want to make). Put shredded mozza cheese in the bottom (to seal it so the dough doesn't get soggy from the sauce). Put a good dollop of pizza sauce on top--you want it to be really saucy, because these have more crust than a normal pizza would. Put your toppings on top of the sauce; not much as you don't want to overflow it, just a slice of pepperoni or maybe a piece of pineapple and a piece of mushroom, whatever you want just not too much. Top with mozza cheese.
Put in the over at 350F for 25 minutes. When you pull them out, check the bottom of one to make sure it is starting to get golden. If it's undercooked then put them back in for a few minutes and maybe consider trying them at 375F.
